After weeks of tweaking, I finally have Ecobee Smart Thermostat running exactly how I want it. Sharing my configuration in case it helps anyone else. The key was adjusting the default settings which are honestly not great out of the box. Once you customize it properly, the experience improves dramatically.

BoldCoder636: Had the same problem. Try resetting to factory defaults and setting up from scratch. Fixed it for me. Pain to reconfigure everything but it works.

BoldVibe231: Have you tried reaching out to support? When I had a similar issue with Ecobee Smart Thermostat they were actually pretty helpful and resolved it within a couple days.
